If you repelace your stock recovery with TWRP, in future youcan't install OTA update, because the official update need to use the original recovery.

In order to root the smartphone, after you repleaced your stock recovery with TWRP, you can install supersu through TWRP, downloading it directly from the website.

The root, write and change your files system, so during installation of a firmware update, is indicated NOT have the root in order to avoid stability problems.
You have to choose, or you root your smartphone and give up the updates (which in any case are published as well as released through OTA and you can flash with SP Flah Tool, through PC), or give up the root and you can have your updates working.
About android 7, it's early for now to know if it will be released!

If you have root and TWRP, you'll not have problem to flash through SP Flash Tool, because the Tool, flash all full firmware and you will lose all that you have on it.
If you want come back to original stock recovery, you only need to flash the original recovery that you can find inside your full firmware downloaded (recovery.img), directly with SP Flash Tool, like if you are flashing all the full firmware, but only choosing your recovery.

ODIN??? What are you talking about??? This is Ulefone, not Samsung....
On Ulefone no need to use the program "one click" that install many malware on the smartphone...in order to have a root on Ulefone, you can install TWRP and after flash superSU through recovery modded!

One-click-programs hardly root Android M. Indeed, I tried Kingroot, Kingoroot and iRoot and neither can root the Metal.

Cuvetto, is it good/necessary to enable Unlock Bootloader option as available under Development Options, when flashing TWRP?
PS Tried, not needed for the SP FlashTool method as above

I can't answer you with certainty, because I don't have an Ulefone Metal.
I can tell you that on Ulefone Paris (I'm the modder) we flash the TWRP created by me, and after that we can install SuperSU through TWRP.
You can try...install TWRP, Download and put SuperSU on your phone or SD: take it from http://forum.xda-developers.com/showthread.php?t=1538053  (only version TWRP STABLE).
Reboot your smartphone on TWRP a flash SuperSU.
Reboot the smartphone and check if you have the root on your smartphone.
